Gluten-Free Ginger Almond Pears

Elegant poached pears with creamy frozen yogurt, a delightful and refreshing treat.
Ingredients:
  • 1 1/2 cups sugar
  • 1 1/2 cups water
  • 1/3 cup chopped crystallized ginger
  • 2 tablespoons lemon juice
  • 1/8 teaspoon almond extract
  • 4 Anjou pears, peeled, cut in half lengthwise and cored
  • 1/4 cup sliced almonds
  • 4 teaspoons sugar
  • 1 cup vanilla frozen yogurt
Instructions:
  • In a 4-quart Dutch oven, combine 1 1/2 cups of sugar, water, ginger, and lemon juice. Bring to a boil over medium-high heat and simmer for 2 minutes until sugar is dissolved. Stir in almond extract. Add pear halves, cover, and bring back to a boil. Reduce heat and simmer covered for 8 to 10 minutes until pears are tender. Remove pears with a slotted spoon to a bowl, cover, and refrigerate until ready to serve.
  • Bring the pear liquid to a boil over high heat for 8 to 10 minutes, stirring occasionally, until slightly thickened and syrupy. Allow it to cool for 30 to 40 minutes until it reaches a warm temperature, then refrigerate for 2 hours until ready to serve.
  • In a 10-inch nonstick skillet, toast almonds over medium heat for 4 to 6 minutes, stirring constantly until they start to brown. Sprinkle 4 teaspoons of sugar over almonds and keep cooking and stirring for 2 to 3 minutes or until the sugar melts and coats the almonds. Transfer the almond mixture to a sheet of foil sprayed with cooking spray. Allow it to cool for 2 to 3 minutes, then break it apart.
  • Place pear halves, cut sides up, in individual dessert bowls. Optionally trim a thin slice from the rounded side of each pear half to prevent it from rolling in the bowl.
  • Add a generous scoop of frozen yogurt (about 2 tablespoons) to the center of each pear half. Drizzle with syrup and sprinkle with almonds.
