Grain-free, indulgent muffins that satisfy cravings without the flour.
Ingredients:
  • 1 3/4 cups almond flour
  • 3/4 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups mashed ripe bananas (3 medium bananas)
  • 1/4 cup maple syrup
  • 3 eggs, beaten
  • 1 teaspoon gluten-free vanilla
  • 1/2 cup coconut oil, melted
Instructions:
  • Preheat oven to 350°F and line a standard 12-cup muffin tin with paper liners.
  • Combine almond flour, baking soda, salt, and cinnamon in a large bowl. In a separate large bowl, mash bananas and mix with maple syrup, eggs, vanilla, and coconut oil. Gently fold the banana mixture into the almond flour mixture until just combined. Distribute batter evenly into muffin cups; cups will be full.
  • Bake until tops are beautifully golden, for about 22-27 minutes. Allow to cool for 5 minutes, then transfer from pan to a cooling rack. Let them cool completely.
