Indulge in these satisfying grain-free pancakes!
Ingredients:
  • 3/4 cup almond meal flour
  • 1/4 cup coconut flour
  • 1 tablespoon flaxseed meal
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/2 cup coconut milk (not cream of coconut)
  • 1/4 cup coconut oil, melted
  • 2 tablespoons real maple syrup
  • 2 teaspoons gluten-free vanilla
  • 1 ripe banana, mashed
  • Diced bananas
  • Chopped pecans, toasted
  • Real maple syrup
Instructions:
  • Preheat the oven to 200°F. In a medium bowl, whisk together the flours, flaxseed, cinnamon, baking soda, and salt. Add the rest of the pancake ingredients and stir until the batter is smooth.
  • Preheat griddle to 350°F or heat nonstick pan over medium heat. Spoon slightly less than 2 tablespoons of batter onto the griddle to make small pancakes the size of silver dollars. Use the back of the spoon to spread them to about 3 inches. Cook for 1 to 2 minutes until pancakes are browned. Flip them over and cook for another 1 to 2 minutes until browned and cooked through. Keep pancakes warm in the oven on an ovenproof plate or cookie sheet while you make the rest.
