Gluten-Free Harvest Pumpkin Spice Bars

Irresistible pumpkin bars with warm spices, plump raisins, and crunchy nuts, finished with a luscious cream cheese frosting.
Ingredients:
  • 1 box (15 oz) Betty Crocker™ Gluten Free Yellow Cake Mix
  • 1 can (15 oz) pumpkin (not pumpkin pie mix)
  • 1/2 cup butter, softened
  • 1/4 cup water
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 3 eggs
  • 1 cup raisins, if desired
  • 1 tub (16 oz) Betty Crocker™ Rich & Creamy Cream Cheese Frosting
  • 1/4 cup chopped walnuts, if desired
Instructions:
  • Preheat the oven to 350°F and gently grease a 15x10x1-inch pan with shortening or cooking spray.
  • In a large bowl, use an electric mixer to beat all ingredients except raisins on low speed for 30 seconds and then on medium speed for 2 minutes, scraping the bowl occasionally. Add in the raisins and spread the mixture in the pan.
  • Bake for 20-25 minutes or until golden brown. Allow to cool fully in the pan on a rack for approximately 2 hours.
  • Cover bars with a generous layer of frosting. Sprinkle with chopped walnuts. Cut into bite-sized squares and chill in the refrigerator.
