Gluten-Free Herbed Roasted Chick Peas

Garbanzo beans, aka chickpeas or ceci beans, are nutty and firm. Roasting them as a crunchy snack is a delicious new trend!
Ingredients:
  • 2 cans (15 oz each) chick peas or garbanzo beans, drained, rinsed
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried rosemary leaves
  • 1/4 teaspoon salt
  • 1/2 teaspoon dried thyme leaves
  • 1/2 teaspoon dried oregano leaves
Instructions:
  • Preheat the oven to 425°F.
  • After patting the chickpeas dry and removing any loose skins, transfer them to an ungreased 15x10x1 inch rectangular pan. Drizzle with oil, sprinkle with seasonings, and toss to coat evenly. Finally, spread the chickpeas out in a single layer in the pan.
  • Bake for 20 minutes, then stir. Continue baking for an additional 15-20 minutes until crispy and slightly browned. Serve right away.
