Simple roasted zucchini: Slice, toss with olive oil, garlic, pepper, Herbes de Provence, then roast in oven.
Ingredients:
  • 1 pound zucchini, each cut in half across the middle, then each half quartered lengthwise
  • 1 teaspoon fresh minced garlic cloves
  • 1 tablespoon extra virgin olive oil
  • Kosher salt
  • 1/2 teaspoon Herbes de Provence or dried thyme, or 1 teaspoon of fresh chopped thyme
  • Freshly ground black pepper
Instructions:
  • Preheat the oven to a toasty 450°F with a rack placed in the top third.
  • Prepare the zucchini by tossing it with garlic and olive oil in a bowl. Spread the zucchini on a foil or silicone-lined sheet pan, skin side down, then sprinkle with 1/4 to 1/2 teaspoon of salt.
  • Achieve golden perfection: Roast the zucchini in a 450°F oven for 8 to 15 minutes, checking frequently for a beautiful browning.
  • Sprinkle herbs, salt, and pepper over the golden-brown zucchini. Transfer the zucchini to a bowl and delicately toss to incorporate the flavors.
