"Roasted zucchini and tomatoes with caramelized onions, Parmesan, and fresh basil - a vibrant summer delight."
Ingredients:
  • 2 zucchini cut in half lengthwise, then cut into 1/2-inch half moons
  • 2 cups quartered ripe tomatoes
  • 0.5 onion, minced
  • 3 cloves garlic, minced
  • 0.5 teaspoon crushed red pepper flakes
  • 0.25 cup olive oil
  • salt and pepper to taste
  • 0.5 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh basil
Instructions:
  • Preheat the oven to a toasty 450 degrees F (230 degrees C) and lightly grease a 9x13-inch baking dish.
  • In the baking dish, toss zucchini, tomatoes, onion, garlic, and red pepper flakes. Pour olive oil on top, sprinkle with salt and pepper, and toss to coat evenly.
  • Roast in the oven until vegetables are tender and slightly golden, for about 18 minutes. Sprinkle with Parmesan cheese and basil after removing from the oven.
