Elevated kale and apple slaw with tangy dressing.
Ingredients:
  • 1 bunch (8 oz) fresh kale, stems removed, cut into very thin strips (about 6 cups)
  • 1 medium crisp apple, cut into julienne (matchstick-cut) strips (about 1 1/2 cups)
  • 1/2 medium red onion, sliced
  • 3 tablespoons red wine vinegar
  • 3 tablespoons lime juice
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 2 teaspoons gluten-free Worcestershire sauce
  • 1/2 teaspoon pepper
Instructions:
  • Combine salad ingredients in a large bowl and toss gently to incorporate.
  • Combine the dressing ingredients in a small bowl until they are thoroughly blended. Drizzle the dressing over the salad and toss it well to ensure it is fully coated. Allow the salad to sit at room temperature for 1 hour to let the flavors meld together, stirring occasionally. Cover and refrigerate until ready to serve, for optimal taste you can also refrigerate overnight.
