Family friendly kale and chicken apple sausage casserole with melted cheese - a hearty and delicious dish.
Ingredients:
  • 4 small sweet potatoes
  • 1 teaspoon olive oil
  • 1 red bell pepper, diced (1 cup)
  • 3/4 cup chopped red onion
  • 1 link gluten-free fully cooked chicken sausage with apples (from 12-oz package), diced
  • 1 bunch (8 oz) fresh kale, ribs removed, leaves sliced (6 cups)
  • 3/4 teaspoon hot paprika or paprika
  • 3 tablespoons water
  • 1/2 cup shredded reduced-fat Cheddar cheese (2 oz)
  • 1/2 cup fat free plain yogurt
Instructions:
  • Preheat oven to 400° F. Prick sweet potatoes with a fork to release steam. Place on a baking sheet. Bake for 50-60 minutes until soft.
  • In a large nonstick skillet, heat oil over medium heat. Sauté bell pepper and onion for about 5 minutes until softened. Brown the sausage, then add kale, paprika, and salt, stirring for about 3 minutes until kale wilts. Pour in water and stir until absorbed. Remove from heat and set aside.
  • Take the sweet potatoes out of the oven and allow them to sit for approximately 5 minutes to cool down slightly. Preheat the oven to the broil setting. Halve the sweet potatoes lengthwise, then gently scoop out the flesh into a skillet with the sausage mixture, ensuring a 1/4-inch shell remains. Mix the sausage and sweet potato together. Transfer the empty shells to an ungreased baking sheet. Fill the shells evenly with the sweet potato and sausage mixture. Top each stuffed sweet potato half with 1 tablespoon of cheese.
  • Place the dish under the broiler, keeping it 4 to 6 inches away from the heat source, for 30 to 60 seconds until the cheese is perfectly melted. Enjoy with a side of creamy yogurt.
