Gluten-free cookie bars loaded with white chocolate chips, cranberries, coconut, and creamy frosting - a festive Christmas treat!
Ingredients:
  • 1 cup unsalted butter, softened
  • 0.75 cup brown sugar
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 2.5 cups gluten-free flour blend (such as Namaste Perfect Flour Blend™)
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 0.5 teaspoon xanthan gum
  • 1 (8 ounce) package white chocolate chips
  • 0.75 cup shredded coconut
  • 1 (16 ounce) container cream cheese frosting
  • 0.5 cup chopped dried cranberries, or to taste
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously butter a 9x13-inch pan.
  • Combine creamy butter, rich brown sugar, sweet white sugar, eggs, aromatic cinnamon, and fragrant vanilla extract in a bowl, mixing until velvety perfection is achieved.
  • Combine flour, baking soda, salt, and xanthan gum in a separate bowl. Add half of the flour mixture to the egg mixture and mix thoroughly. Incorporate the rest of the flour mixture, then mix in the white chocolate chips and coconut. Press the mixture into the prepared pan.
  • Bake in the preheated oven for 23 minutes, or until the edges are golden brown. Allow to cool completely for about 30 minutes.
  • Spread a luscious layer of cream cheese frosting on top and garnish with delightful cranberry bits. Cut into 48 enticing triangles for perfect bite-sized treats.
