Gluten-Free Salted Caramel Sugar Cookies

Gluten-free holiday baking made easy and delicious.
Ingredients:
  • 1 box Immaculate Baking Co.™ Gluten Free sugar cookie mix
  • 1/2 cup butter, very soft but not melted
  • 1 tablespoon water
  • 1 teaspoon gluten-free vanilla
  • 1 egg
  • 36 gluten-free caramels, unwrapped (from 14-oz bag)
  • 3 tablespoons heavy whipping cream
  • 2 oz (4 squares) 60% cacao bittersweet chocolate, melted
  • 1 teaspoon coarse sea salt
Instructions:
  • Preheat the oven to 350°F. Combine cookie mix, softened butter, water, vanilla, and egg in a medium bowl, stirring until a soft dough forms.
  • Roll the dough into 36 balls measuring 1 1/4 inches each. Place them 2 inches apart on ungreased cookie sheets.
  • After baking for 10 to 12 minutes or until the edges are lightly golden brown, gently press the center of each cookie with the handle of a wooden spoon. Allow the cookies to cool on the baking sheet for 3 minutes before transferring them to a cooling rack. Let them cool completely for about 20 minutes before enjoying.
  • In a medium microwavable bowl, heat caramels and cream uncovered on High for 2 to 3 minutes, stirring occasionally, until smooth. Spoon approximately 1 teaspoon of the caramel into each cookie's indentation. Allow to cool for 15 minutes.
  • Drizzle melted chocolate over the mixture and sprinkle with salt. Allow the chocolate to set for approximately 30 minutes.
