Gluten-free holiday stuffing with customizable mix-ins like nuts, sausage, apples, and raisins.
Ingredients:
  • 1 (1 pound) loaf gluten-free bread (such as Udi's® Millet-Chia bread)
  • 2 medium onions, diced
  • 3 stalks celery, diced
  • 1 teaspoon chopped fresh sage
  • 1 teaspoon dried thyme leaves
  • 0.75 teaspoon salt
  • ground black pepper to taste
  • 2 cups gluten-free chicken broth
  • 2 large eggs, beaten
Instructions:
  • Preheat your oven to a toasty 325 degrees F (165 degrees C) and generously grease a 3-quart baking dish.
  • Dice the bread into 3/4-inch cubes and evenly spread them in a single layer on the baking sheet.
  • Bake until golden and crispy, about 12 to 17 minutes in the preheated oven.
  • Heat olive oil in a large skillet over medium heat. Sauté onions and celery until soft, about 8 to 10 minutes. Add sage, thyme, salt, and pepper; stir well.
  • Combine the toasted bread cubes, chicken broth, and beaten eggs in the skillet until fully mixed. Transfer the mixture to a greased 3-quart baking dish.
  • Bake covered in the preheated oven for 30 minutes, then uncover and bake an additional 10 minutes until the top is crisp and lightly browned.
