Try this delicious gluten-free lentil pasta with tasty turkey mince for a healthy twist on pasta night.
Ingredients:
  • 250g dried red lentil penne pasta
  • 200g green beans, sliced diagonally
  • 4.60 gm extra virgin olive oil
  • 1 small red onion, finely chopped
  • 2 tsp crushed garlic
  • 1 tsp dried chilli flakes
  • 300g extra lean turkey breast mince
  • 400g can cherry tomatoes
  • 2 tsp red wine vinegar
  • 120g baby spinach
  • 60g (1/4 cup) fresh ricotta
Instructions:
  • Prepare the pasta according to the instructions on the package in a large saucepan of boiling salted water, adding the beans for the final 2 minutes of cooking time.
  • Heat oil in a deep non-stick frying pan over medium heat. Sauté onion for 3 minutes until softened. Stir in garlic and chilli flakes and cook for 1 minute until aromatic. Add turkey and cook for 5 minutes, breaking up lumps with a wooden spoon until browned.
  • Combine tomatoes, vinegar, and 60ml (1 ⁄4 cup) water in a pot. Bring to a boil, then simmer for 5 minutes. Stir in pasta, beans, and spinach. Mix well. Serve topped with dollops of ricotta.
