Budget-friendly meal plan 50/50 Bolognese

Transform this big-batch recipe into multiple meals for easy enjoyment. Serve with pasta or freeze for later as Spaghetti Bolognese, cheat’s Cottage Pie, and Sloppy Joe. Made with lentils and minced beef for a budget-friendly and eco-friendly option, packed with 3 of your 5-a-day.
Ingredients:
  • ½ a bunch of rosemary (10g)
  • 6 rashers smoked pancetta or smoked streaky bacon
  • olive oil
  • 750 g minced beef or pork
  • 8 cloves of garlic
  • 500 g fresh or frozen chopped mixed onion, carrot & celery
  • 5 tablespoons balsamic vinegar
  • 3 x 400 g tins of lentils
  • 4 x 400 g tins of plum tomatoes
Instructions:
  • Place a large deep casserole pan over medium-high heat. Finely chop the rosemary leaves and slice the pancetta. Add them to the pan with 3 tablespoons of olive oil, cook until lightly golden, stirring regularly. Add the mince, break it up with a spoon, and let it brown for 15 minutes, stirring regularly. Add the chopped garlic and mixed veg, season with salt and pepper, cook for another 15 minutes, stirring regularly. Stir in the balsamic, then add the lentils with their juice. Add the tomatoes, squeezing them by hand, then pour half a tin of water into each of the four tins. Swirl and pour into the pan. Bring to a boil, then simmer for 2 hours on medium-low heat until thickened, stirring occasionally. Adjust seasoning to taste, and enjoy as is or store extra portions in the fridge or freezer for later meals.
