Try this savory baked risotto with spicy sausage and mushrooms for a flavorful twist. Perfect for any meal, this dish is hearty and wallet-friendly.
Ingredients:
  • 510.00 gm chicken style liquid stock
  • 9.20 gm olive oil
  • 560g spicy pork sausages
  • 300.00 gm arborio rice
  • 250g cherry tomatoes, halved
  • 50g baby rocket leaves
Instructions:
  • Preheat your oven to 180°C. In a saucepan, combine stock with 2 cups of cold water. Bring to a boil over high heat, then reduce heat to low and simmer.
  • Heat oil in a flameproof dish over medium heat, then brown sausages for 7 to 8 minutes, turning occasionally. Transfer sausages to a plate, slice thickly, and coat rice in the dish by stirring.
  • Pour in the flavorful stock mixture, and gently stir until well combined. Add the savory sausage to the dish, then transfer it to the oven and bake covered for 20 minutes. Afterward, delicately uncover the dish, sprinkle the top with juicy tomatoes, and continue baking for 10 minutes or until the liquid is almost absorbed. Once done, carefully take the dish out of the oven and season generously with freshly ground pepper.
  • Top the creamy risotto with fresh arugula leaves for a burst of peppery flavor.
