Beef and Spicy Sausage Foldovers

Revolutionize taco night with these irresistible baked foldovers that are just as delicious when reheated.
Ingredients:
  • 1/2 lb lean (at least 80%) ground beef
  • 1/2 lb bulk spicy Italian pork sausage
  • 1 packet (1 oz) Old El Paso™ Original Taco Seasoning Mix
  • 1 can (14.5 oz) diced tomatoes with green chiles, undrained
  • 4 1/2 cups Original Bisquick™ mix
  • 1 cup boiling water
  • 1 cup shredded Mexican cheese blend (4 oz)
  • 3/4 cup sour cream
  • 3/4 cup thick & chunky salsa
  • Fresh cilantro sprigs, if desired
Instructions:
  • Preheat oven to 400°F and generously grease a large cookie sheet with shortening or cooking spray.
  • In a spacious skillet, sauté beef and sausage over medium-high heat for 5 to 7 minutes, stirring occasionally, until fully cooked; then drain off excess fat. Mix in taco seasoning and tomatoes. Lower heat to medium and cook for an additional 5 minutes, stirring occasionally.
  • In a large bowl, use a fork to stir together Bisquick mix and boiling water until dough forms. Transfer the dough onto a surface dusted with Bisquick mix, roll it to coat, and knead it 20 times. Divide the dough into 6 balls, approximately 1/2 cup each, and roll or pat each ball into a 7-inch round.
  • Mix the cheese into the beef. Place about 1/2 cup of the beef mixture onto one half of each round. Dampen the edge of the round with water. Fold the round over the beef mixture and use a fork to seal the edge. Cut three small slits on the top of each crust to release steam. Transfer them carefully onto a cookie sheet using a spatula.
  • Bake for 20 to 22 minutes until golden brown. Top each foldover with 2 tablespoons of sour cream and salsa. Finish with a sprinkle of fresh cilantro.
