Fresh fruit skewers with refreshing mint marinade.
Ingredients:
  • 2 limes
  • 1 1/2 lb assorted melons, cut into 1-inch cubes (about 5 cups)
  • 1/3 cup sugar
  • 1/3 cup dark rum, if desired
  • 3 tablespoons finely chopped fresh mint leaves
  • 12 bamboo skewers (5 or 6 inch)
Instructions:
  • Grate the zest from 2 limes to get 2 tablespoons. Cut the limes in half crosswise and squeeze them over a small bowl until you have 6 tablespoons of juice.
  • Place melon cubes in a 1-gallon resealable bag. Sprinkle on lime peel, pour in lime juice, add sugar, rum, and mint. Seal the bag and gently shake to coat the melon.
  • Chill for a minimum of 1 hour, allowing the flavors to meld, but do not exceed 24 hours. Skewer 4-5 melon cubes on each stick before discarding the marinade to serve.
