Prepare this make-ahead frozen drink mix for effortless entertaining or impromptu gatherings.
Ingredients:
  • 3 cups water
  • 1 cup sugar
  • 3/4 cup fresh lime juice (from about 5 limes)
  • 3/4 cup light rum
  • 1/2 cup lightly packed fresh mint leaves
  • 1 1/2 cups gluten-free ginger ale
Instructions:
  • In a small saucepan, gently heat water and sugar over medium heat until sugar dissolves, about 2 minutes. Allow to cool completely for about 30 minutes.
  • In a powerful 8-cup blender, combine sugar water, lime juice, rum, and mint leaves (if using a smaller blender, blend in batches). Blend on high for about 20 seconds or until the mint is finely chopped.
  • Transfer the mixture into a 13x9-inch (3-quart) glass baking dish. Freeze for 4 to 6 hours, gently breaking apart ice crystals with a fork every 2 hours.
  • Spoon 1/2 cup of the mixture into each glass, pour 1/4 cup of ginger ale over it, stir, and garnish with mint sprigs if desired.
