Gluten-free orange and pistachio friands

Pistachio adds crunch, orange brings tang to standout friands.
Ingredients:
  • 80g packet pistachio kernels
  • 5 egg whites, lightly beaten
  • 150.00 gm almond meal
  • 225.00 gm gluten-free pure icing sugar, sifted
  • 165.00 ml gluten-free plain flour
  • 150g butter, melted, cooled
  • 20.00 ml finely grated orange rind
  • 21.00 gm orange juice
Instructions:
  • Preheat your oven to 190C/ 170C fan-forced. Prepare three mini muffin pans by greasing and flouring them (refer to the note for details). Roughly chop 1/4 cup of pistachios.
  • In a bowl, mix together egg white, almond meal, icing sugar, flour, chopped pistachios, butter, orange rind, and orange juice. Spoon the mixture evenly into the prepared pans, then sprinkle the remaining pistachios on top.
  • Bake for 15 minutes or until golden and slightly firm to the touch. Allow to rest in pans for 2 minutes, then transfer to a wire rack to cool. Serve and enjoy.
