Delicate gluten-free waffles with crispy exterior and soft interior, made with a yeasty batter prepared ahead of time.
Ingredients:
  • 0.25 cup warm water
  • 1 teaspoon light honey
  • 0.5 tablespoon active dry yeast
  • 1 cup milk, at room temperature
  • 0.25 cup light olive oil
  • 2 cups gluten-free flour, divided
  • 1 beaten egg
  • 1 pinch salt
Instructions:
  • The night before preparing waffles, in a small bowl, mix warm water, honey, and yeast. Let it sit until bubbly, about 5 to 10 minutes.
  • In a large mixing bowl, whisk together milk and olive oil. Gradually add 1 1/2 cups of gluten-free flour, 1/4 cup at a time, stirring well after each addition until a thick yet pourable batter forms. If needed, adjust consistency by adding more flour, 1/8 cup at a time, until desired pourable consistency is reached.
  • Gently fold the yeast mixture into the batter until just incorporated. Cover the bowl with a lid or plastic wrap and allow it to rest on the kitchen counter overnight. Make sure the bowl is large enough as the batter will expand significantly in size.
  • Combine the beaten egg and salt with the batter when ready to make the waffles.
  • Preheat your waffle iron as per the manufacturer's instructions. Cook each waffle by pouring 1/4 cup of batter onto the iron, and cook until golden brown and the steaming stops, approximately 5 minutes. Repeat with the rest of the batter.
