Indulge in a timeless French bacon and Swiss cheese egg dish perfect for any meal.
Ingredients:
  • 1 cup Bisquick™ Gluten Free mix
  • 1/3 cup plus 1 tablespoon shortening
  • 3 to 4 tablespoons cold water
  • 8 slices bacon, crisply cooked, crumbled (1/2 cup)
  • 1 cup shredded Swiss cheese (4 oz)
  • 1/3 cup finely chopped onion
  • 4 eggs
  • 2 cups whipping cream or half-and-half
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon ground red pepper (cayenne)
Instructions:
  • Preheat the oven to 425°F. In a medium bowl, blend the shortening with the Bisquick mix using a pastry blender or two knives until the mixture resembles small peas. Add cold water one tablespoon at a time, stirring with a fork until all the flour is moistened and the dough almost cleans the side of the bowl. If needed, add 1 to 2 more teaspoons of water.
  • Form pastry into a ball and evenly press it onto the bottom and up the sides of an ungreased 9-inch quiche dish. Bake for 12 to 14 minutes, or until the pastry just starts to brown and sets.
  • Lower the oven temperature to 325°F. Sprinkle the bacon, cheese, and onion into the crust. In a medium bowl, lightly beat the eggs and then mix in the rest of the filling ingredients. Pour the mixture into the crust.
  • Bake for 45 to 50 minutes until a knife inserted in the center comes out clean. Allow to cool for 10 minutes before serving.
