Gluten-free quinoa Anzac biscuits

Gluten-free twist on classic Anzac treat with quinoa flakes.
Ingredients:
  • 125g butter, chopped
  • 53.60 gm golden syrup
  • 150.00 gm gluten-free self-raising flour
  • 250.00 ml quinoa flakes
  • 85.00 gm desiccated coconut
  • 125.00 ml flaked almonds
  • 135.00 gm firmly packed brown sugar
  • 40.00 gm hot water
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced and prepare 2 baking trays with baking paper.
  • In a small saucepan over medium heat, combine the butter and golden syrup. Stir and cook for 3 to 4 minutes until melted.
  • In a large bowl, mix together flour, quinoa flakes, coconut, almonds, and sugar. Add the butter mixture and hot water, then stir with a wooden spoon until fully combined. Let it sit for 5 minutes before proceeding.
  • Roll mixture into tablespoon-sized balls, then space them 4cm apart on trays. Gently flatten with a fork, bake for 15 minutes (swap trays halfway through), until golden. Let cool on trays for 5 minutes, then transfer to a wire rack. Serve and enjoy!
