Gluten-free, delicious cookies for everyone to enjoy!
Ingredients:
  • 65.00 gm NESTLÉ BAKERS' CHOICE Cocoa
  • 375.00 ml gluten-free plain flour
  • 8.00 gm gluten-free baking powder
  • 250.00 ml quinoa flakes (see Notes)
  • 125.00 ml gluten-free milk chocolate chips
  • 215.00 gm caster sugar
  • 200g butter, melted, cooled slightly
  • 1 egg white, lightly beaten
Instructions:
  • Preheat your oven to 180C/160C fan-forced and prepare 2 large baking trays by lining them with baking paper.
  • In a large bowl, gently sift together cocoa, flour, and baking powder. Add quinoa, chocolate chips, and sugar. Mix until well combined. Incorporate butter and egg white using a wooden spoon until fully mixed.
  • Form level tablespoons of the mixture into round balls and arrange them on the prepared trays, ensuring they are 4cm apart.
  • Bake for 12 to 15 minutes, switching trays halfway through, until gently firm to the touch. Allow to cool on trays for 5 minutes, then transfer to a wire rack. Serve and enjoy!
