Decadent gluten-free chocolate cake bursting with double the chocolate flavor, made with quinoa instead of flour.
Ingredients:
  • 2 cups cold cooked quinoa
  • 0.75 cup melted butter
  • 0.33333334326744 cup milk
  • 1.5 teaspoons vanilla extract
  • 1.25 cups white sugar
  • 1 cup cocoa powder
  • 1.5 teaspoons baking powder
  • 0.5 cup chocolate chips
  • 0.5 cup chopped pecans
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a rectangular cake pan.
  • Combine quinoa, butter, eggs, milk, and vanilla extract in a blender and blend until smooth.
  • In a large bowl, mix together sugar, cocoa powder, baking powder, baking soda, and salt. Stir in the cooked quinoa until well combined. Gently fold in the chocolate chips and pecans, then pour the batter into the prepared pan.
  • Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool on a wire rack.
