Indulge in a rich, fudgy cake secretly packed with nutritious beets. A hit with kids and adults alike.
Ingredients:
  • 1 (15 ounce) can sliced beets, drained with 1/2 cup liquid reserved
  • 1.5 cups white sugar
  • 3 eggs
  • 0.5 cup olive oil
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 0.75 cup unsweetened cocoa powder
  • 1.5 teaspoons baking soda
  • 0.5 teaspoon salt
  • 0.5 cup chocolate chips
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease three 8x4x2-inch bread pans.
  • Puree beets and their liquid in a blender until creamy.
  • In a large bowl, combine pureed beets, sugar, eggs, olive oil, and vanilla extract and beat until smooth.
  • In a separate bowl, combine flour, cocoa powder, baking soda, and salt. Add this mixture to the beet mixture and stir until smooth. Fold in chocolate chips and pour the batter into the bread pans, filling each about 3/4 full.
  • Bake until a toothpick inserted into the center comes out clean, approximately 30-40 minutes in a preheated oven.
