Chewy gluten-free quinoa oatmeal cookies with dark chocolate, pecans - perfect for snacking on the run!
Ingredients:
  • cooking spray
  • 2 cups gluten-free oats, divided
  • 1 cup cooked and cooled quinoa
  • 0.5 cup applesauce
  • 2 eggs
  • 0.25 cup white sugar
  • 2 teaspoons vanilla extract
  • 0.75 cup dark chocolate chips
  • 0.5 cup chopped pecans
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and give a light coat of cooking spray to a baking sheet.
  • Add 1 cup oats to a food processor and pulse 7 to 8 times until coarsely ground. Then, add quinoa and pulse until finely chopped.
  • Combine the oat and quinoa mixture in a large bowl with 1 cup oats, applesauce, eggs, sugar, vanilla extract, baking soda, and salt. Mix thoroughly, then gently fold in the chocolate chips and pecans.
  • Spoon dollops of batter onto the baking sheet.
  • Bake in the preheated oven until edges turn golden brown, approximately 14 minutes. Allow to rest on the baking sheet for 1 to 2 minutes before transferring to a wire rack to cool for about 25 minutes.
