Quinoa oatmeal cookies made with baby oat cereal are a nutritious and simple toddler snack. Freeze extra dough for convenience.
Ingredients:
  • 1 cup butter, softened
  • 1 cup all-purpose flour
  • 0.75 cup infant oat cereal
  • 1.5 cups quick-cooking oats
  • 1 cup cooked quinoa
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), then elegantly line a baking sheet with parchment paper.
  • Cream together butter, brown sugar, and white sugar until light and fluffy. Stir in egg and vanilla extract until well combined.
  • Combine the flour, baking soda, and salt in a bowl, then mix into the butter until just combined. Gently stir in the oats and quinoa. Spoon teaspoonfuls of dough onto a baking sheet, leaving 2 inches of space between each.
  • Bake in the oven until edges turn golden, for about 10 to 15 minutes. Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
