Elevate your sandwich game with this delicious gluten-free bread for a satisfying lunch.
Ingredients:
  • 3/4 cup warm water (105°F to 115°F)
  • 1 tablespoon fast-acting dry yeast
  • 3/4 cup plus 1 tablespoon tapioca flour
  • 1/2 cup plus 2 tablespoons potato starch flour
  • 1/2 cup white rice flour
  • 1/4 cup sweet white sorghum flour
  • 1/4 cup garbanzo and fava flour
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons gluten free baking powder
  • 1 teaspoon xanthan gum
  • 1 teaspoon guar gum
  • 1/4 cup sugar
  • 1/4 cup sunflower oil
  • 1/2 teaspoon cider vinegar
  • Cooking spray (without flour)
Instructions:
  • Generously coat an 8x4-inch loaf pan with cooking spray without flour. Combine water and yeast in a small bowl, then set aside. In another small bowl, mix together all flours, salt, baking powder, xanthan gum, and guar gum; set aside.
  • Beat eggs, sugar, oil, and vinegar in a medium bowl with an electric mixer on medium speed for 1 to 2 minutes. Incorporate yeast mixture, then add flour mixture and beat on medium speed until fully combined. Transfer batter to pan.
  • Lightly mist the dough with cooking spray and use a spatula to even it out if needed. Cover the dough with plastic wrap and let it rise in a warm place (80°F to 85°F) for 1 to 1.5 hours, until it reaches the top of the pan.
  • Preheat oven to 375°F. Unwrap the loaf and bake for 30 minutes. Lower the oven temperature to 350°F. Place parchment paper over the loaf and bake for an additional 25-30 minutes until a thermometer reads 207°F when inserted in the center. Let it cool for 5 minutes before transferring to a rack. Allow it to cool completely for about 40 minutes.
