Delicious gluten-free sandwich, ideal for a quick and tasty lunch.
Ingredients:
  • 400g can chickpeas, drained, rinsed
  • 1 garlic clove, crushed
  • 2.50 gm mild paprika
  • 42.00 gm lemon juice
  • 36.40 gm extra virgin olive oil
  • 8 Corn Thins Original
  • 40g baby rocket
  • 200g gluten-free rare roast beef slices
  • 150g roast capsicum, sliced
  • 70g fetta cheese, crumbled
  • 20.00 ml gluten-free balsamic glaze
Instructions:
  • Combine chickpeas, garlic, paprika, lemon juice, and oil in a food processor. Blend until creamy, adding 1 to 2 tablespoons of water as needed for a smooth consistency. Season with salt and pepper to taste.
  • Lay out corn thins on a serving board. Spread a generous tablespoon of hummus on each corn thin. Top them with rocket leaves, sliced beef, diced capsicum, and crumbled feta. Finish with a drizzle of balsamic glaze and serve.
