Gluten-Free Slow-Cooker Sweet Sesame Chicken

Family-friendly slow cooker meal with sweet honey, savory soy sauce, and nutty sesame flavors.
Ingredients:
  • 20 oz boneless skinless chicken breast
  • 1/2 cup finely chopped onion
  • 1 tablespoon toasted sesame oil
  • 2 teaspoons garlic chile sauce
  • 2 tablespoons tomato paste
  • 2 teaspoons grated gingerroot
  • 1/2 cup honey
  • 1/4 cup gluten-free low-sodium soy sauce
  • 2 teaspoons cornstarch
  • Hot cooked basmati rice, if desired
  • 1/4 cup sliced green onions (4 medium)
  • 2 teaspoons sesame seed
Instructions:
  • Prepare the slow cooker by spraying it with cooking spray. Add the chicken to the slow cooker. In a medium microwave-safe bowl, combine onions, sesame oil, garlic chili sauce, tomato paste, and gingerroot. Microwave uncovered on High for 4 to 5 minutes, stirring occasionally until onions are softened. Mix in honey and soy sauce.
  • Drizzle the sauce over the chicken in the slow cooker. Cover and cook on Low heat for 4 to 6 hours until the chicken is tender and fully cooked. Mix cornstarch with 2 tablespoons of water. Transfer the chicken to a cutting board. Stir the cornstarch mixture into the sauce in the slow cooker. Increase the heat to High, cover, and cook for 5 to 10 minutes until the sauce slightly thickens.
  • Prepare the chicken by shredding or cutting it into bite-size pieces. Once the sauce has slightly thickened, add the chicken back into the slow cooker and mix well. Serve the dish over rice and garnish with green onions and sesame seeds.
