Gluten-free stuffed zucchini blossoms filled with gooey mozzarella and Parmesan, then crispy fried in rice flour.
Ingredients:
  • 1 cup mozzarella cheese, fresh
  • 3 tablespoons grated Parmesan-Reggiano cheese
  • 10 zucchini blossoms
  • 7 tablespoons rice flour
  • 2 eggs
  • 0.25 cup milk
  • 0.25 cup sparkling water
  • 2 tablespoons sweet rice flour
  • salt and ground black pepper to taste
  • 1 cup oil for frying
Instructions:
  • Blend mozzarella and Parmesan-Reggiano cheeses in a bowl until creamy. Fill each zucchini blossom with 1 tablespoon of the cheese mixture, then seal the ends by pinching them together.
  • Combine rice flour, eggs, milk, sparkling water, sweet rice flour, salt, and pepper in a bowl. Gently coat stuffed blossoms in the mixture.
  • In a saucepan over medium heat, sizzle blossoms in oil until they turn crisp and a light golden brown color, approximately 2 minutes. Drain on paper towels to remove any excess oil.
