Gluten-free stuffed turkey breast perfect for holiday gatherings.
Ingredients:
  • 50g butter
  • 18.20 gm pure olive oil, plus extra to drizzle
  • 1 onion, diced
  • 150g bacon, diced
  • 375.00 ml gluten-free breadcrumbs
  • 40.00 ml chopped fresh oregano
  • 20.00 ml chopped fresh thyme
  • 1kg frozen turkey breast roll, thawed
  • 2kg potatoes, peeled, chopped
  • 1kg pumpkin, peeled, chopped
  • 400g steamed green beans, to serve
Instructions:
  • Preheat oven to 180C (160C fan). In a frypan over medium heat, melt butter and olive oil. Sauté onion and garlic until soft, about 5-6 mins. Add bacon and cook for another 5 mins. Transfer to a large bowl and let it cool slightly. Stir in breadcrumbs, herbs, and season to taste.
  • Place the turkey breast skin side down. Spread the stuffing mix along the center lengthwise. Roll over the breast to seal the stuffing inside and tie with kitchen string to secure.
  • Prepare the turkey by arranging it in a baking tray with potatoes and pumpkin. Drizzle everything with olive oil and generously season with salt and pepper. Roast in the oven for 1 hour or until fully cooked. Serve alongside roasted vegetables, steamed green beans, and a delicious red wine gravy.
