Whip up a quick and delicious stuffed turkey breast for an impressive Christmas dinner.
Ingredients:
  • 2.2kg turkey breast roll (see note)
  • 20g butter, melted
  • whole-berry cranberry sauce, to serve
  • 50g butter
  • 1 large red onion, finely chopped
  • 115.00 gm walnuts, chopped
  • 4 garlic cloves, crushed
  • 750.00 ml firmly-packed stale white breadcrumbs
  • 165.00 ml seedless raisins
  • 82.50 ml chopped fresh sage
  • 62.50 ml chopped fresh flat-leaf parsley leaves
Instructions:
  • In a saucepan over medium heat, melt butter until sizzling. Add onion and cook until softened, about 5 minutes. Toss in walnuts and garlic, cook until fragrant and golden, about 5 minutes. Remove from heat. Stir in breadcrumbs, raisins, sage, parsley, salt, and pepper. Mix until well combined. Allow to cool before using.
  • Preheat the oven to 200°C. Lay the turkey, skin-side down, on a flat surface. Spread the stuffing over one fillet, then fold the turkey over to cover the filling. Use kitchen string to secure it. Put the turkey, seam-side down, on a wire rack in a roasting pan. Brush it with melted butter.
  • Roast the turkey until juices run clear when pierced with a skewer, then cool completely on a plate and refrigerate covered with plastic wrap.
  • Slice the succulent turkey and pair it with a generous dollop of tangy cranberry sauce.
