Ingredients:
  • 30g walnut
  • 60ml olive oil
  • 1 brown onion, finely chopped
  • 70g bread
  • 85g date
  • 40.00 ml port
  • 40.00 ml chopped sage
  • 1 (about 2kg) turkey breast fillet
  • 500ml chicken stock
  • 125ml white wine
  • 24 sage leaves
Instructions:
  • Preheat your oven to 200°C. In a frying pan over medium heat, heat 1 tablespoon of oil. Sauté the onion for 5 minutes until softened, then remove from heat.
  • Combine the onion with bread, dates, walnuts, port, and sage in a bowl. Mix well and season with salt and pepper to taste.
  • Lay the turkey skin-side down on a clean surface. Flatten the breast by opening the tenderloin. Carefully slice from the center of the breast outwards without cutting all the way through. Repeat on the other side. Spread the stuffing down the middle of the breast. Fold the sides to seal the stuffing inside. Secure by tying with kitchen string at 2cm intervals.
  • Prepare the roasting pan by adding a wire rack to the bottom. Gently place the turkey on the rack. Brush the turkey with 2 teaspoons of the remaining oil and season generously with salt and pepper. Pour the stock and wine into the pan. Roast in the oven, basting occasionally with the pan juices, for 1 1/2 hours or until the juices run clear when pierced in the thickest part of the turkey. Remove from the oven, cover with foil, and let it rest for 15 minutes before serving.
  • Heat the rest of the oil in a frying pan over medium heat. Fry the sage leaves for 1-2 minutes until crispy. Drain on a paper towel-lined plate.
  • Present the turkey beautifully on a serving platter, then expertly slice. Enhance with a flavorful drizzle of pan juices and a sprinkle of fragrant sage leaves before serving.
