Savor gluten-free Thai chicken wings with a refreshing salad for dinner.
Ingredients:
  • 2kg chicken wings
  • 65.00 gm rice flour
  • olive oil cooking spray
  • 68.75 gm gluten-free sweet chilli sauce
  • 20.00 gm Thai seasoning
  • 65.00 gm gluten-free tomato sauce
  • 60g mixed salad leaves
Instructions:
  • Preheat the oven to a high heat. Cover two large baking trays with foil and then lightly oil two wire racks and place them on top of the trays.
  • Trim off and discard wing tips from the chicken. Cut wings into 2 pieces. Place rice flour in a shallow dish and coat chicken in it, shaking off any excess. Transfer the coated chicken to wire racks and lightly spray with olive oil.
  • Bake chicken for 20 minutes, then flip and generously spray with olive oil. Continue baking for another 20 minutes or until the skin is golden and crisp and the chicken is fully cooked.
  • In a medium saucepan over medium heat, mix sweet chili sauce, Thai seasoning, tomato sauce, and 1/2 cup cold water. Stir occasionally and cook for 5 minutes until the sauce begins to simmer. Then, reduce heat to low and simmer uncovered for an additional 5 minutes until the sauce thickens.
  • Plate the chicken alongside the flavorful sauce and fresh salad leaves.
