Delicious paleo, gluten-free Thai-style chicken stir fry for Whole30®.
Ingredients:
  • 0.5 onion, minced
  • 0.5 cup water
  • 0.5 cup tangerine juice
  • 0.33333334326744 cup coconut aminos (soy-free seasoning sauce)
  • 0.33333334326744 cup coconut oil
  • 4 green onions, sliced into rounds
  • 2 cloves garlic, minced
  • 1 (1 inch) piece fresh ginger, minced
  • 1 teaspoon vinegar
  • 2 pounds boneless chicken breast, cut into cubes
  • 1 cup string beans, trimmed, or to taste
  • 1 cup chopped broccoli
  • 0.25 cup ghee (clarified butter)
  • 1 (8 ounce) package fresh mushrooms, sliced
  • 0.5 onion, sliced
  • 2 tablespoons coconut oil
  • 3 zucchini, spiralized
  • 2 carrots, shredded
Instructions:
  • Combine minced onion, water, tangerine juice, coconut aminos, 1/3 cup coconut oil, green onions, garlic, ginger, vinegar, salt, and black pepper in a bowl, whisk until well mixed. Pour half of the marinade over the chicken in another bowl.
  • Boil a large pot of lightly salted water. Add string beans and broccoli and cook uncovered until broccoli turns bright green, approximately 1 minute. Drain in a colander, cool quickly under cold water for a few minutes, then transfer to a large bowl.
  • In a skillet over medium heat, sauté mushrooms in ghee until lightly browned, about 5 to 10 minutes. Transfer mushrooms to a bowl with beans and broccoli, keeping the skillet for later use.
  • Sauté sliced onion in the ghee until soft, for 5 to 10 minutes. Add cooked onion to the bowl with the mushroom mixture.
  • Strain marinade from chicken and set aside. Grill or pan-sear chicken until fully cooked, approximately 10 minutes. Add chicken to mushroom mixture.
  • In a hot skillet, sizzle 2 tablespoons of coconut oil. Quickly stir-fry zucchini and carrots until tender, about 2 to 3 minutes. Then add in the mushroom mixture, chicken marinade, and reserved marinade. Simmer and stir until everything is heated through, which should take about 5 to 10 minutes.
