Hearty Whole30® ground beef soup with fresh and canned vegetables for comforting flavor.
Ingredients:
  • 0.25 cup olive oil
  • 2 medium potatoes, diced
  • 1 medium onion, diced
  • 4 medium carrots, chopped, or more to taste
  • 2 stalks celery, chopped, or more to taste
  • 2 teaspoons salt
  • 4 cups vegetable broth
  • 1 (15 ounce) can cut green beans, drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon garlic powder
  • 0.125 teaspoon cayenne pepper
  • 1 pound ground beef
Instructions:
  • In a large, heavy saucepan over medium heat, heat up olive oil. Add potatoes, onion, carrots, and celery. Season with 1/2 teaspoon of salt, stir, then cover and cook until vegetables are softened, about 7 to 10 minutes.
  • Combine broth, green beans, and tomatoes in a pot. Mix in the rest of the seasonings, then bring to a boil. Reduce heat and simmer until vegetables are tender, around 20 minutes.
  • As mixture simmers, heat a large skillet over medium-high heat. Brown and crumble ground beef in the hot skillet for 5 to 7 minutes. Discard grease, then add beef to the soup pot. Cook for an additional 10 minutes, stirring well.
