Satisfying Whole30® beef and vegetable soup - perfect for sharing or enjoying as leftovers for even more flavor!
Ingredients:
  • 1 teaspoon ghee (clarified butter), or as needed
  • 2 pounds 95%-lean ground beef
  • salt and ground black pepper to taste
  • 1 medium yellow onion, chopped
  • 6 cloves garlic, minced
  • 6 medium russet potatoes, peeled and cubed
  • 1 cup chopped carrots
  • 2 (32 ounce) cartons bone broth
  • 1 teaspoon dried basil, or to taste
  • 1 teaspoon dried oregano, or to taste
  • 0.5 medium head cabbage, chopped
  • smoked sea salt to taste (optional)
  • 2 small zucchini, sliced
  • 1 cup chopped fresh green beans
Instructions:
  • In a large stew pot over medium-high heat, heat 1 teaspoon of flavorful ghee. Add ground beef, season with salt and pepper, and cook until browned and crumbly, about 5 to 7 minutes. Transfer the beef to a plate, leaving any delicious grease in the pot.
  • Sauté onion and garlic in the pot, adding extra ghee if necessary, until onion is soft and translucent, approximately 5 minutes. Combine with beef.
  • Cook the potatoes in the pot with remaining oil until golden. Season with salt and pepper, sauté for 3 to 5 minutes. Add carrots and cook for an additional 1 to 2 minutes. Return the ground beef, onions, and garlic to the pot and mix well.
  • Combine rich bone broth, flavorful tomato paste, aromatic basil, and fragrant oregano in a pot and bring to a lively boil. Gently introduce crisp cabbage and let it simmer for a tantalizing 5 minutes.
  • Sprinkle in some aromatic smoked salt and savor the rich flavors before adjusting seasonings as needed. Introduce zucchini and green beans to the pot, letting them stew until tender, about 3 to 5 minutes.
