Flavorful cauliflower rice side dish, perfect for Spanish or Mexican cuisine and Whole30® friendly.
Ingredients:
  • 2 tablespoons olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 small red bell pepper, diced
  • 1 small tomato, diced
  • 3 cups riced cauliflower
  • 0.5 cup vegetable broth
  • 1 tablespoon tomato paste
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon ancho chile powder
Instructions:
  • In a skillet over medium heat, sauté onion until translucent for about 3 minutes. Stir in garlic and cook for 2 more minutes. Then add red bell pepper and tomato, and cook for another 3 minutes.
  • Combine cauliflower rice, broth, tomato paste, cumin, paprika, oregano, and ancho chile powder in the skillet. Cook for about 5 minutes, stirring occasionally.
  • Taste and season as needed. Cook cauliflower until tender but still slightly firm, for an additional 3 to 5 minutes. Season with salt and pepper before serving.
