Zesty chile-lime baked cod - a flavorful, Whole30-friendly dish for busy nights!
Ingredients:
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon chili powder
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon ground cumin
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.125 teaspoon cayenne pepper
  • 2 (5 ounce) cod fillets
  • 2 tablespoons extra-virgin olive oil, divided
  • 1 tablespoon ghee (clarified butter)
  • 2 medium limes, zested and juiced
Instructions:
  • In a small bowl, mix paprika, parsley, oregano, chili powder, garlic powder, cumin, salt, black pepper, and cayenne. Brush cod fillets with 1 tablespoon of olive oil, then evenly coat with the spice mixture. Refrigerate for at least 30 minutes, or up to 12 hours.
  • Preheat the oven to a toasty 450 degrees F (230 degrees C) and lay the cod on a foil-lined baking sheet.
  • Bake until the fish easily flakes with a fork and is completely opaque, for 10 to 12 minutes in the preheated oven.
  • In a small saucepan over low heat, gently melt ghee with the remaining olive oil. Stir in lime zest and juice, swirling the pan to combine. Drizzle the lime butter over the cod before serving.
