Whip up delicious Whole30 banana bread muffins, sweetened naturally with ripe bananas. Perfect for a guilt-free breakfast or snack!
Ingredients:
  • 2 teaspoons coconut oil
  • 3.5 cups almond flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 large ripe bananas
  • 0.25 cup coconut oil, melted and cooled
  • 2 large eggs
Instructions:
  • Prepare your ingredients.
  • Preheat your oven to 350 degrees F (175 degrees C) and generously coat a rimmed baking sheet with 2 teaspoons of luscious coconut oil.
  • Combine almond flour, salt, and baking soda in a bowl, whisk until well blended.
  • Smash bananas into chunks and transfer to a microwave-safe bowl. Microwave for about 30 seconds until they turn soft.
  • Creamily mash the bananas, then introduce the 1/4 cup of melted coconut oil and eggs, mixing until thoroughly blended. Finally, fold in the dry ingredients until fully incorporated.
  • Using a spoon, evenly distribute the batter to form 12 biscuit-shaped mounds on the baking sheet.
  • Bake in the preheated oven for about 17 minutes until peaks are lightly browned. Let it cool slightly before serving.
