Delicious gluten-free zucchini bread that rivals the classic version - simple and irresistible!
Ingredients:
  • 3 cups gluten-free flour
  • 1 tablespoon ground cinnamon
  • 1 pinch ground nutmeg
  • 2.25 cups white sugar
  • 1 cup applesauce
  • 0.5 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 2 cups shredded zucchini
Instructions:
  • Preheat your oven to a toasty 325 degrees F (165 degrees C) and generously grease two 9x5-inch loaf pans.
  • In a bowl, combine flour, cinnamon, salt, baking soda, baking powder, and nutmeg. In a separate bowl, beat sugar, applesauce, eggs, oil, and vanilla extract together; then stir in zucchini. Gradually mix in the flour mixture into the zucchini mixture until well combined. Pour the batter into prepared loaf pans.
  • Bake until a toothpick inserted in the center comes out clean, approximately 50 minutes in the preheated oven.
