Delicious gluten-free quick bread with zucchini, apple, and warm spices. Made effortlessly with Bisquick® Gluten Free mix.
Ingredients:
  • 2 cups Bisquick™ Gluten Free mix
  • 1 cup shredded zucchini (about 1 medium)
  • 1 small unpeeled apple, shredded (1/2 cup)
  • 1/3 cup vegetable oil
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon gluten-free vanilla
  • 3 eggs
Instructions:
  • Preheat your oven to 350°F and generously grease the bottom of a 9x5-inch loaf pan with shortening or cooking spray (without flour).
  • In a spacious bowl, use an electric mixer on low speed to blend all ingredients for 30 seconds, making sure to scrape the sides of the bowl. Increase speed to medium and continue mixing for 1 minute, scraping the bowl occasionally. Transfer the batter into the pan.
  • Bake for 50 to 55 minutes until a toothpick inserted in the center comes out clean. Let it cool for 10 minutes, then remove from the pan to a cooling rack. Cool completely for about 2 hours before wrapping tightly in plastic wrap or foil for storing.
