Chai and zucchini loaf

Chai-infused honey and apple cake, gluten and dairy-free fruit loaf.
Ingredients:
  • 60ml (1/4 cup) macadamia oil
  • 60ml (1/4 cup) honey
  • 1 chai tea bag, leaves removed, 
bag discarded
  • 120g buckwheat flour
  • 50g almond meal
  • 35g (1/4 cup) coconut flour
  • 8.00 gm gluten-free baking powder
  • 2.50 gm ground ginger
  • 1/2 tsp ground cardamom
  • 1/4 tsp ground cloves
  • 3 eggs, lightly whisked
  • 240g zucchini
  • 200g apple
  • 20.00 ml natural sliced almonds
  • 2 tsp pepitas
Instructions:
  • Preheat the oven to 180°C/160°C fan forced. Grease a 9 x 21cm loaf pan and line with baking paper. In a small saucepan over low heat, combine oil, honey, and tea. Cook and stir for 3 minutes until smooth. Allow it to cool slightly to enhance the flavors.
  • In a large bowl, mix together buckwheat flour, almond meal, coconut flour, baking powder, cinnamon, ginger, cardamom, and cloves. Create a well in the center.
  • Combine the oil mixture, egg, zucchini, and apple in the well and stir until well mixed. Pour the batter into the prepared pan, smoothing the surface with the back of a spoon. Sprinkle with almonds and pepitas, then bake for 50-55 minutes until a skewer inserted in the center comes out clean. Let it cool in the pan for 15 minutes before turning onto a wire rack to cool completely.
