Ingredients:
  • 9.20 gm olive oil
  • 200g bacon pieces
  • 1 brown onion, finely chopped
  • 8 eggs
  • 80ml milk
  • Salt & freshly ground pepper
  • 2 zucchini, coarsely grated, excess moisture squeezed
  • 1 large carrot, coarsely grated
  • 1 can sweetcorn
  • 50g plain flour
  • Salad, to serve
Instructions:
  • Preheat your oven to 200C and prepare an 18cm-square cake pan by lining it with non-stick baking paper.
  • In a non-stick frying pan over medium heat, sizzle the bacon and onion together until the onions are soft, about 8-10 minutes. Once cooked, drain on paper towel and let cool for about 10 minutes.
  • Combine the eggs and milk, then season with salt and pepper.
  • Combine the zucchini, carrot, corn, and bacon mixture until fully mixed. Add the flour and stir again. Transfer the batter to the pan and level the top.
  • Bake for 30-35 minutes until golden brown and set. Let cool in the pan for 15 minutes, then cut into pieces and serve with the salad.
