Try this simple, nutritious gluten-free zucchini and tuna slice for a satisfying lunch!
Ingredients:
  • 18.20 gm olive oil
  • 3 medium zucchini, coarsely grated
  • 425g can tuna, drained, flaked
  • 120g tasty cheese
  • 135g self-raising flour
  • 125ml olive oil
  • 4 Free Range Eggs
Instructions:
  • Preheat the oven to 180°C. Grease and line a 17cm x 27cm slice pan with baking paper. In a frying pan over high heat, sauté the onion and garlic in oil for 3 mins until softened. Then, transfer them to a large bowl.
  • Mix zucchini, tuna, cheddar, and flour into the onion mixture. In a separate bowl, blend extra oil with eggs, then add to the zucchini mixture. Stir until thoroughly combined. Pour into the prepared pan.
  • Bake until golden and firm, about 40 minutes. Let it cool in the pan before cutting into pieces.
