Whip up this quick and nutritious dinner in just 10 minutes, featuring tuna, chickpeas, and olives for a satisfying meal any day of the week!
Ingredients:
  • 400g packet Uncle Ben's® Microwave Brown Rice
  • 2 tsp finely grated lemon rind
  • 65.63 gm lemon juice
  • 18.20 gm extra virgin olive oil
  • 1 large zucchini
  • 62.50 ml fresh dill sprigs
  • 400g can chickpeas
  • 1 celery stalk
  • 180g tub green olive halves in herbs
  • 425g can tuna in olive oil
  • 40g baby rocket
  • Lemon zest, to serve
Instructions:
  • Prepare fluffy and perfectly cooked rice as per the instructions on the package.
  • As the rice simmers, mix together lemon zest, lemon juice, and olive oil in a spacious bowl. Use a vegetable peeler to create zucchini ribbons and add them to the bowl. Gently tear dill into the mixture. Season with salt and pepper, then toss everything together until well combined.
  • First, drain the chickpeas and add half of them to the zucchini mixture. Then, place the remaining chickpeas in a bowl and roughly mash them with a fork. Thinly slice the celery and add it to the zucchini mixture along with the olives, tuna, and rocket. Toss everything together to combine.
  • Divide mixture into individual bowls, then generously dust with zest before serving.
