Create a gourmet tart with just four simple ingredients.
Ingredients:
  • 2 sheets (25 x 25cm) ready-rolled frozen puff pastry, just thawed
  • 2 x 150g pkts goat's cheese (South Cape brand) at room temperature
  • 4 (about 50g each) fresh ripe figs, ends trimmed, thickly sliced lengthways
  • 57.20 gm red gum honey
Instructions:
  • Preheat oven to 200°C. Line a large baking tray with non-stick baking paper. Place one pastry sheet on the tray and layer the second sheet on top. Using a small sharp knife, create a 2cm-thick border around the edge of the pastry without cutting all the way through.
  • Spread half of the creamy goat's cheese over the entire pastry base, ensuring every bite is filled with its delicious flavor. Layer the luscious fig slices over the cheese, creating a perfect pairing of sweet and tangy. Sprinkle the rest of the cheese over the figs for an extra creamy texture, and finish by drizzling a generous amount of honey evenly over the top, enhancing the dish with a touch of natural sweetness.
  • Bake in a hot oven for 12-15 minutes until the pastry is golden brown and puffed. Remove and cut into squares, then serve right away.
