Goat's cheese tart with chia seed pastry

Indulgent goat cheese tart, ideal for hosting.
Ingredients:
  • 250g plain flour
  • 175g chilled unsalted butter, chopped
  • 40.00 ml black chia seeds
  • 4 eggs, plus 1 egg yolk
  • 2 red onions, thinly sliced
  • 20.00 ml chopped thyme leaves
  • 24.00 gm brown sugar
  • 300ml pure (thin) cream
  • 300g soft goat's cheese
Instructions:
  • Combine flour, 125g butter, and 1/2 tsp salt in a food processor until the mixture resembles fine crumbs. Blend in chia seeds, 1 egg, and 1 tbs iced water until a smooth ball forms. Shape into a disc, wrap in plastic, and chill for 30 minutes. Melt the remaining 50g butter in a frypan over medium-low heat. Sauté onion and thyme for 30 minutes until soft. Stir in sugar and vinegar, and cook for an additional 5 minutes until caramelized. Let it cool.
  • Prepare a 26cm loose-bottom tart pan by greasing it. Roll out the pastry on a lightly floured work surface until it is 3mm thick, then use it to line the prepared pan. Allow it to chill for 15 minutes.
  • Preheat your oven to a toasty 190°C.
  • Poke pastry base all over with a fork. Cover with baking paper and fill with pastry weights or rice. Bake for 10 minutes. Remove paper and weights, then bake for an additional 5-6 minutes until pastry is light golden. Lower oven temperature to 170°C.
  • In a clean food processor, combine the remaining 3 eggs and yolk with cream and goat's cheese. Season and blend until smooth. Spread onion mixture over pastry base, top with the goat's cheese mixture, and bake the tart for 25 minutes until the filling is just set. Let it cool in the pan for 10 minutes before serving.
  • Garnish with a vibrant and flavorful beetroot, fig, and pomegranate salad featuring creamy goat's cheese.
