Golden butter rice: fragrant rice cooked in butter with ginger and turmeric, inspired by Indian golden milk.
Ingredients:
  • 1/2 cup unsalted butter
  • 1 tablespoon finely grated fresh ginger root
  • 1 1/4 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon brown sugar
  • 1 teaspoon fine salt
  • 2 cups basmati rice or other long grain white rice
  • 3 cups water
  • 1/3 cup chopped walnuts
  • 1/3 cup sliced green onions
Instructions:
  • In a pan or pot with a tight-fitting lid, melt butter over medium heat until it bubbles. Add ginger, turmeric, cayenne, brown sugar, and salt and cook for 1 minute while whisking.
  • Coat every rice grain with butter by stirring, then add water and bring to a boil over high heat. Once boiling, gently settle rice into an even layer by shaking and swirling the pan, then reduce heat to medium-low.
  • Simmer covered for 15 minutes. Allow to rest covered for 10 minutes without lifting the lid or stirring.
  • Uncover the pot and gently fluff the rice with a fork to separate the grains. Season according to your taste, then serve right away, topping with walnuts and green onions for a beautiful presentation.
